Organic Halloumi Goat/Sheep
Our Halloumi is produced in the traditional method that date back to the earliest known surviving descriptions of halloumi in Cyprus recorded in the mid-16th century by Italian visitors to Cyprus.
There are two main types of halloumi, fresh and mature. Fresh halloumi has a semi-hard, elastic texture and a milder, less salty flavor compared to the aged version. As mature halloumi is stored in brine it has a harder, drier texture, as well as a saltier flavor. Both versions have a slight minty flavor, due to the addition of spearmint during the production of the cheese.
Our Halloumi is produced with 100 % Organic Goat milk as per the centuries old recipe ensuring that the traditional cheese flavor is kept as it was over the centuries.
